    That’s how the Man gets you. You pay for a block of cheese but get one full of holes. A cheese conspiracy.

  3. Well in all kidding aside and simply put, its gas bubble caused by fermentation. As the cheese ages the gas builds up and when you slice the bubble burst.
    The older the chess the stronger the taste and smell and the harder to slice.
    “Who cut the cheese?” 😉
